Dandelion Brandy

A golden, floral cordial made from wild dandelion petals and warm honey.

Ingredients

  • 2 cups fresh dandelion petals (yellow only, no green parts)

  • 2 cups brandy

  • ¾–1 cup raw honey (to taste)

  • Zest of 1 orange

  • Zest of 1 lemon

  • 1 vanilla bean, split (or 1 tsp vanilla extract)

Optional:

  • Small piece fresh ginger or 1 cinnamon stick

    • Small piece fresh gingeror 1 cinnamon stick

      Instructions

    1. Gather the petals

    Pick dandelions on a dry, sunny day when they are fully open.
    Remove all green parts—only the yellow petals should remain.

    Lay petals out briefly to let any small insects wander off.

    2. Build the infusion

    In a clean glass jar:

    • Add dandelion petals

    • Add citrus zest

    • Add vanilla and any optional spices

    • Pour brandy over everything until fully covered

    Seal tightly.

    3. Let it steep

    Store in a cool, dark place for 2–4 weeks.
    Gently shake the jar every few days.

    4. Strain and sweeten

    Strain through a fine mesh sieve or cheesecloth.

    Warm the honey slightly so it pours easily, then stir into the infused brandy until fully dissolved.

    Taste and adjust sweetness as needed.
